This was originally a side dish, but as it’s very rich and there are just two of us, I now make it as a complete meal, like I do Mac ‘n Cheese.

I want a baked potato with cheese and sour cream. I only have medium size red potatoes. Every online recipe is all about Rosemary olive oil and I just want a potato. How long do I bake it for at what temp and do I just put fork holes in it or do I need to actually put some oil on it and stuff.
