This is more methodology than recipe, so adjust quantities and ingredients to suit your needs. Serves two, plus lunch.

Smidge olive oil

2 chicken breasts, cut in large cubes

1 large smoky or hot sausage, sliced

1 large diced onion

1 rib celery, cubed

1/2 (or more!) pepper cubed

(Optional tsp thyme or oregano or savoury)

2 tsp Cajun rub mix, such as Emeril’s essence

796 ml (28oz) can of diced tomatoes

(Optional thawed shrimp to taste)

Lightly oil your crockpot. Layer in everything from the chicken to the essence and turn it on low for 4-5 hours. Stir, add tomatoes and shrimp and cook for another hour or so. Serve on rice.
