Mr lurker brought home a bag of lamb hearts on what I can only call a whim. Anybody got recipes or suggestions?
I’m not a big fan of organ meats myself. I’ve had baked stuffed heart once and . . . well, I ate it. It was chewy and tough and the flavor was not to my taste, if not quite as offputting as kidney. I’ve never prepared hearts. So far, using google-fu I’ve seen suggestions to baste them in olive oil and vinegar and broil them, and this recipe for Moroccan-style spiced kebabs. I’m tempted by the kebab marinade, because it might cover the taste of organ meat?
I mean, in theory I’m all for using all the bits of an animal. If I can find a way to prepare it that I don’t mind eating, that would be a total win.
