This is as authentically Thai as I am. Not at all! But, remember when anything with peanut and hot flavours = Thai? That’s when this cheap dish evolved.

In a microwave safe cup, put

1/3 cup water

3 tbsp peanut butter

2 tbsp soy sauce

1-2 tsp hot sauce

2 tsp sugar, brown sugar or honey

1 1/2 tsp chilli powder

1 tsp garlic powder

Heat for 1 minute and stir. Done. Keeps in the fridge for months

THE IMPORTANT PART

When you are poor: This sauce can be put on rice or noodles and eaten as is!!! It makes a meal.

This can be used to cook meat in a casserole with onions and carrots or most vegetables.

It makes a stir fry with meat or seafood or vegetable.

This makes a kickass salad dressing.

And a sauce for pita sandwiches.

And a vegetable dip.

Or a fruit dip.

It has saved my budget for decades
