UPFRONT: A major component of this is a vinegar mint sauce such as Crosse and Blackwell. I don’t know of a substitute.

INGREDIENTS

2 parts good chicken or turkey stock

1 part Basmati or long grain rice

1 part frozen green new peas

Lemon Mint Dressing (follows)

Toasted sunflower seeds, slivered almonds or pine nuts,

Optional chopped green onion, and/or cucumber and/or tomato

DIRECTIONS

Cook rice in stock with peas. Toss with dressing and optional vegetables. CHILL. To serve, sprinkle with nuts.

TIP

Add chicken or seafood for a meal.

LEMON MINT DRESSING

In a small jar, shake:

3 Tbsp good olive oil

2 tbsp lemon juice

1 Tbsp mint sauce

3 finely minced garlic cloves

Fresh ground black pepper

(Optional addition dried mint to taste)
