I'm making rice bowls for dinner tonight. I am very excited. I love rice bowls. I make the rice in my rice cooker, using half water and half vegetable stock. I also throw in lime zest and chopped cilantro. I'm going to top the rice with sauteed "chorizo" seitan, chihuahua cheese, roasted corn, tomatoes, scallions, salsa, crema, and guacamole. I'm thinking about adding roasted brussels sprouts, but I'm not sure about it.
